Western-Style (Everyday Use)

• Tea Amount: 3 g per ~250–300 ml of water

• Water Temperature: 90–95 °C

• Rinse (Optional): Quickly rinse the leaves (~5 seconds) and discard to “wake up” the tea

• First Infusion: Steep for 3–4 minutes (up to 5 minutes for a richer brew)

• Re-steeping: Re-steep once or twice, increasing steep time by ~30–60 seconds for later brews

• Serve: Decant fully after brewing to prevent over-extraction

Gongfu-Style (Traditional / Connoisseur)

• Tea-to-Water Ratio: 6–7 g of tea per 100 ml in a small gaiwan or clay pot

• Water Temperature: ~95 °C

• Rinse: Pour hot water over the leaves for ~5 seconds, then discard

• First Infusion: Steep for 30–45 seconds

• Subsequent Infusions: Increase steeping time by 10–20 seconds each round

• Total Infusions: Expect 5–8 or more infusions, depending on the leaf quality

• Serve: After each steep, pour the tea into a fairness pitcher before serving — don’t leave the leaves sitting in water

General Tips

• Use fresh, filtered water to bring out the full depth and nuance of the tea

• Pre-warm your teaware (teapot/gaiwan and cups) with hot water before brewing to maintain temperature stability
