Western-Style Brewing

• Use 3–4 g of tea per ~250–300 ml of water

• Heat water to 95–100 °C

• Steep for 3–5 minutes, adjusting to your taste preferences

• Re-use the leaves for 2–3 infusions, extending steep time slightly each round

• Pour out all the liquid immediately after steeping to preserve clarity and depth

Gongfu-Style (Traditional / Connoisseur)

• Use 6–8 g of tea per 100 ml of water

• Use water at 95–100 °C

• Quickly rinse the leaves (~5 seconds) to awaken them, then discard that water

• First infusion: steep for 15–25 seconds, depending on your teaware and strength preference

• For subsequent infusions, increase steep time by 5–10 seconds per round

• Expect 6–9+ infusions, depending on the leaf quality

• After each steep, pour into a fairness pitcher or small cups — do not leave leaves sitting in hot water

General Brewing Tips

• Use fresh, filtered or spring water to bring out the tea’s rich cinnamon and mineral character.

• Pre-warm your teaware (gaiwan or Yixing pot and cups) with hot water before brewing to help maintain a stable temperature.

• Observe how the flavour evolves: early infusions may highlight warm spice and strength, while later ones deepen into smooth sweetness and rock charm.

• Store the tea in an airtight, opaque container, away from light, moisture, and strong odours, to preserve its aroma and potency.
