Western-Style Brewing

• Tea amount: 3–4 g per ~250–300 ml water

• Water temperature: 95–100 °C

• First infusion: Steep for 3–5 minutes, adjusting to your taste

• Re-steeping: You can re-use the leaves for 2–3 infusions, adding a bit more steep time each round

• Serve: Pour out the tea immediately after steeping to preserve its smooth, delicate character

Gongfu-Style (Traditional / Connoisseur)

• Tea-to-water ratio: 6–8 g per 100 ml water

• Water temperature: Around 95–100 °C

• Rinse: Give the leaves a quick rinse (~5 seconds) to awaken them, then discard that water

• First infusion: Steep for 20–30 seconds, depending on how strong you like it

• Subsequent infusions: Gradually increase steep time by 5–10 seconds per round

• Total infusions: Expect 6–10+ steeps, depending on the quality of the leaves

• Serve: Use a fairness pitcher or pour directly into small cups — don’t leave leaves sitting in water

General Brewing Tips

• Use fresh, filtered or lightly mineralised water to highlight the tea’s floral, fruity, and woody notes.

• Pre-warm your teaware (gaiwan, clay teapot, and cups) with hot water before brewing to maintain even temperature.

• Pay attention to the flavour evolution: early infusions may emphasise floral and fruity tones, while later ones reveal deeper woody sweetness.

• Store your tea in an airtight, opaque container away from light, heat, moisture, and strong odours to preserve its aroma and freshness.
