Brewing Methods
Western-Style Brewing
-
Use 4–5 g of the tea per ~250–300 ml of water
-
Use water at around 95–100 °C
-
Steep the first infusion for 4–6 minutes, depending on how strong you prefer it
-
Re-steeping: You can infuse the leaves 2–3 times; extend steep time by 30–60 seconds for later brews
-
Serve: Pour out the liquid fully immediately after steeping to preserve its layered profile
Gongfu-Style (Traditional / Connoisseur)
-
Use 7–8 g of tea per 100 ml water
-
Use water at 95–100 °C
-
Rinse: Quickly rinse the leaves (~5 seconds) to awaken them, then discard the rinse water
-
First infusion: Steep for 15–30 seconds, adjusting to strength
-
Subsequent infusions: Increase steeping time by 10–20 seconds each round
-
Total infusions: Expect around 6–10+ steeps, depending on the quality and age of the leaves
-
Serve: After each steep, pour into a fairness pitcher or small cups — don’t leave the leaves sitting in hot water
General Brewing Tips
-
Use fresh, filtered or spring water — this helps highlight the tea’s aged and woody character.
-
Pre-warm your teaware (gaiwan or Yixing pot, cups) with hot water before brewing to maintain a stable temperature.
-
Notice how flavour evolves: early infusions may offer mellow sweetness and aged wood notes, while later brews can reveal deeper, richer complexity.
-
Store the tea in an airtight, opaque container, away from heat, light, moisture, and strong scents to preserve its depth and aroma.
