Western‑Style Brewing

• Tea Amount: 3–4 g per ~250–300 ml of water

• Water Temperature: Approximately 95–100 °C (just off the boil)

• First Infusion: Steep for 2–3 minutes

• Re-steeping: You can re-steep 2–3 times, increasing steep time by ~30 seconds for later infusions

• Serve: Pour out all the tea after steeping to avoid over‑extraction

Gongfu‑Style (Traditional / Connoisseur)

• Tea-to-Water Ratio: 6–8 g of tea per 100 ml water

• Water Temperature: Around 98–100 °C

• Rinse: Quickly rinse (~5 seconds) to awaken the leaves, then discard the rinse water

• First Infusion: Steep for ~15–20 seconds

• Subsequent Infusions: Gradually increase the steeping time (by ~5–10 seconds each round)

• Total Infusions: Expect 8–10+ infusions, depending on leaf quality

• Serve: After each infusion, pour into a fairness pitcher or directly into tasting cups — don’t leave leaves sitting in water
