Western‑Style Brewing

• Tea amount: 3–4 g per ~250–300 ml water

• Water temperature: 90–95 °C

• First infusion: Steep for 3–5 minutes, adjusting to your taste

• Re-steeping: Reuse leaves for 2–3 infusions, increasing steep time slightly each round

• Serving: Pour all the tea out immediately after steeping to preserve its delicate balance

Gongfu‑Style (Traditional / Connoisseur)

• Tea-to-water ratio: 5–7 g per 100 ml water

• Water temperature: Around 90–95 °C

• Rinse: Quick (~5 seconds) rinse to awaken the leaves, then discard the rinse water

• First infusion: Steep for 10–20 seconds (depending on how strong you like it)

• Subsequent infusions: Gradually increase steeping time by 5–10 seconds each round

• Total infusions: Expect around 6–10+ infusions, depending on leaf quality

• Serving: After each steep, pour into a fairness pitcher or cups — don’t leave the leaves sitting in water

General Brewing Tips

• Use fresh, filtered or spring water to highlight the tea’s floral and sweet notes.

• Pre-warm your teaware (gaiwan, teapot and cups) with hot water before brewing to help temperature stability.

• Taste each infusion — Jin Jun Mei evolves well: early steeps bring out floral sweetness, later ones deepen into honeyed richness.

• Store the tea in an airtight, opaque container, away from light, heat, moisture, and strong odours to preserve its aroma and freshness.
