Brewing Methods

Western‑Style Brewing

  • Tea Amount: 3–4 g per ~250–300 ml water

  • Water Temperature: 95–100 °C

  • First Infusion: Steep for 3–5 minutes, depending on your strength preference

  • Re‑steeping: Reuse the leaves 2–3 times, adding ~30 seconds to each subsequent steep

  • Serving: Pour out the tea immediately after steeping to preserve its balance and avoid bitterness

Gongfu‑Style (Traditional / Connoisseur)

  • Tea-to-Water Ratio: 6–8 g per 100 ml water

  • Water Temperature: Around 95–100 °C

  • Rinse: Quickly rinse (~5 seconds) to open up the leaves, then discard the rinse water

  • First Infusion: Steep for 10–20 seconds (adjust based on your teaware and taste)

  • Subsequent Infusions: Gradually increase steeping time by 5–10 seconds each round

  • Total Infusions: Expect around 6–10+ infusions, depending on leaf quality

  • Serving: After each steep, pour into a fairness pitcher or cups — do not leave the leaves sitting in water

General Brewing Tips

  • Use fresh, filtered or spring water to highlight the tea’s natural mineral and spice character.

  • Pre‑warm your teaware (gaiwan, clay pot, and cups) with hot water before brewing to help maintain stable temperatures.

  • Pay attention to how the flavour evolves: early infusions often show crisp cinnamon and rock depth, while later ones reveal sweetness, floral undertones, and mellow rock finish.

  • Store the tea in an airtight, light‑proof container, away from heat, moisture, and strong odours to preserve its rare, delicate character.
