Western‑Style Brewing

• Tea Amount: 3–4 g per ~250–300 ml of water

• Water Temperature: 95–100 °C

• First Infusion: Steep for 3–5 minutes (adjust to taste)

• Re‑steeping: Reuse leaves 2–3 times; lengthen steeping time slightly each round

• Serve: Pour out the liquor immediately to maintain balance and clarity

Gongfu‑Style (Traditional / Connoisseur)

• Tea-to-Water Ratio: 6–8 g per 100 ml water

• Water Temperature: Around 95–100 °C

• Rinse: Quickly rinse (~5 seconds) to awaken the leaves, then discard the rinse water

• First Infusion: Steep for 15–20 seconds (depending on your teaware)

• Subsequent Infusions: Gradually increase steep time by 5–10 seconds each round

• Total Infusions: Expect around 6–10+ infusions, depending on leaf quality

• Serve: Pour into a fairness pitcher or directly into cups — don’t leave leaves sitting in hot water

General Brewing Tips

• Use fresh, filtered or spring water to highlight the tea’s natural spice and mineral nuance.

• Pre-warm your teaware (gaiwan or Yixing teapot, plus tasting cups) with hot water before brewing — this helps maintain stable temperature.

• Pay attention to how the flavour evolves: early steeps may emphasize crisp cinnamon and warm roast, while later rounds reveal sweetness, floral notes, and deep minerality.

• Store your tea in an airtight, opaque container, away from heat, moisture, and strong odours to preserve its rare character.
