Brewing Methods
Western-Style (Everyday Use)

Use 3–4 g of tea per 250–300 ml of water.

Heat your water to 90 – 95 °C (just off the boil) to bring out the depth without scorching.

Optionally, rinse the leaves briefly (5–10 seconds) to awaken them, then discard the rinse.

Steep for 3–5 minutes, adjusting for your taste — shorter if you prefer a lighter liquor, longer for a richer brew.

You can re-steep the leaves 2–3 times, increasing the steeping time (e.g. +30–60 seconds) with each infusion.

Decant fully after brewing to stop the extraction; this helps preserve clarity and prevents bitterness.
Gongfu-Style (Traditional & Connoisseur)

Use a gaiwan or small teapot (100–120 ml) plus a fairness pitcher.

Measure 6–8 g of tea per 100 ml of water to create a concentrated brew.

Heat water to 90–95 °C for optimal extraction without damaging the leaves.

Rinse the leaves with hot water for 5 seconds, discard that water to help open the leaves.

For the first infusion, steep for 20–30 seconds (lighter oolong) or up to 45 seconds for more roasted styles.

For subsequent infusions, gradually increase steeping time by ~5–15 seconds per round.

Expect to get 6–12+ infusions from a high-quality oolong — each steep reveals new layers of flavor.

Always pour the brewed tea into the fairness pitcher before serving — don’t leave leaves sitting in hot water.

Use fresh, filtered water to highlight the tea’s complex aromas and flavours.

Pre-warm your teaware (teapot, gaiwan, cups) by rinsing with hot water — this helps the leaves open more evenly.
